Our vision

Avión was born from a love of tequila and its rich robust agave flavor. Founder Ken Austin embarked on a journey to fulfill his dream and create a tequila that would celebrate the highlands’ agave flavor. This led Ken to Jesus Maria, where the world’s best agave is grown and where the Lopez family lovingly manages the land.

The journey

Together in collaboration Ken and the Lopez family spent years blending old-school tequila making techniques with a philosophy of never cutting corners and focusing on the art of creating tequila. Every step of the process works to preserve and enhance the natural, rich, roasted flavors of the Avión agave. This is Avión, which bartenders, consumers and experts describe as, quite simply, delicious.

In 2012, Avión was crowned “World’s Best Tasting Tequila” and “World’s Best White Spirit” at the San Francisco World Spirits Competition (the most prestigious competition for the spirits industry). Ranking #1 against all tequilas, vodkas, gins and white rums. Over 1400 spirit brands entered the competition.

Our Story

Avión was born in Jesus Maria, Mexico, a picturesque town of close knot families and friends. Avión is the result of meticulous attention to detail, blending traditional tequila making techniques with our philosophy of never cutting corners.

Single Source Agave

100% of Avión’s agave comes from Jesus Maria, grown on lands that are owned or managed by the Lopez family. At around 7,000 feet above sea level, the nutrient rich soil and large temperature swings create a rich and naturally sweet agave.

Harvested by hand

Our single source Avión agave each take 7-10 years to reach maturity. Only the finest agave is handpicked when ripe, harvested by the family’s team of jimadores in the traditional method.

Slow Roasting

After harvesting, Avión agave is slow roasted in brick ovens for three days. The low temperatures perfectly caramelize the agave, bringing out the natural sweetness and rich flavors.

Small Batch Distillation

Following fermentation, distillation occurs in small pot stills handmade in Jesus Maria. Avión uses up to 30% more agave in each bottle of tequila, making us one of the most inefficient tequila producers.

Ultra-Slow Filtration

After distillation, the tequila “juice” undergoes ultra-slow filtration –a proprietary approach that takes up to ten times longer. This ensures the rich agave flavor that was protected, while removing alcoholic overtones and impurities.

Aging in Whiskey Barrels

We use white oak barrels previously used to age American Whiskey. Our Reposado spends six months in the barrels, which is 3x longer than required. Avión Añejo is aged for two years, which is 2x longer than required.
